Ingredients
- 3 chicken breasts sliced into tenders
- 1 whole egg
- 1/3 cup almond flour
- Paprika
- Salt and Pepper
- Buffalo Sauce
Salad
- 3 cups spring mix
- 2 chopped carrots
- 2 chopped celery sticks
- 5-6 sliced cherry tomatoes
- 1/2 cucumber (no skin and no seeds)
- Feta Cheese (Optional)
Dressing
- 1/4 cup greek yogurt
- 1 tbsp apple cider vinegar
- 1 tsp oregano
- 1/2 tsp agave nectar
- Salt and Pepper
Instructions
- Mix almond flour with seasonings in a large bowl and whisk the egg in a separate bowl.
- Dip the chicken in egg and then roll in the almond flour mixture.
- Place in the air fryer at 350F for 15 minutes, flipping halfway.
- Dip your chicken tenders in the buffalo sauce and return to the air fryer for 5 minutes.
- Prepare the salad dressing by mixing all the ingredients.
- Assemble your salad with spring mix, cucumber, carrots, celery, and tomatoes.
- Top your salad with buffalo chicken tenders, dressing, and feta cheese.
- Enjoy!
