Buffalo Chicken Salad

Ingredients

  • 3 chicken breasts sliced into tenders
  • 1 whole egg
  • 1/3 cup almond flour
  • Paprika
  • Salt and Pepper
  • Buffalo Sauce

Salad

  • 3 cups spring mix
  • 2 chopped carrots
  • 2 chopped celery sticks
  • 5-6 sliced cherry tomatoes
  • 1/2 cucumber (no skin and no seeds)
  • Feta Cheese (Optional)

Dressing

  • 1/4 cup greek yogurt
  • 1 tbsp apple cider vinegar
  • 1 tsp oregano
  • 1/2 tsp agave nectar
  • Salt and Pepper

Instructions

  1. Mix almond flour with seasonings in a large bowl and whisk the egg in a separate bowl.
  2. Dip the chicken in egg and then roll in the almond flour mixture.
  3. Place in the air fryer at 350F for 15 minutes, flipping halfway.
  4. Dip your chicken tenders in the buffalo sauce and return to the air fryer for 5 minutes.
  5. Prepare the salad dressing by mixing all the ingredients.
  6. Assemble your salad with spring mix, cucumber, carrots, celery, and tomatoes.
  7. Top your salad with buffalo chicken tenders, dressing, and feta cheese.
  8. Enjoy!
