Red Pepper and Feta Cheese Omelette

Ingredients

  • 2 large eggs or 3 egg whites
  • 1 tablespoon olive oil
  • 1/4 chopped red onion
  • 1/2 chopped red bell pepper
  • 1/2 chopped green bell pepper
  • 2 tablespoons feta cheese
  • 4 chopped Sun-dried tomatoes
  • Salt and Pepper to taste

Instructions

  1. In a large bowl whisk the eggs or the egg whites with salt and pepper.
  2. Heat a nonstick skillet or omelet pan over medium heat and add the olive oil. Add the diced onion, and sauté until tender.
  3. Add the chopped peppers and cook until the bell peppers are tender. Turn off the heat.
  4. Let the vegetables cool and add them to the reserved beaten eggs.
  5. Heat the same nonstick pan and pour the egg mixture into the pan.
  6. Move around so the eggs come to the edges of the omelet to allow the uncooked parts in the middle to flow out to the edges.
  7. Cook your omelet until the bottom of the egg is golden brown.
  8. Add your sundried tomatoes and feta cheese.
  9. Fold the omelet in half and slide it off the pan onto a plate.
  10. Enjoy!
