Did you know that eggs are HEART-HEALTHY?
Ingredients
- 2 large eggs or 3 egg whites
- 1 tablespoon olive oil
- 1/4 chopped red onion
- 1/2 chopped red bell pepper
- 1/2 chopped green bell pepper
- 2 tablespoons feta cheese
- 4 chopped Sun-dried tomatoes
- Salt and Pepper to taste
Instructions
- In a large bowl whisk the eggs or the egg whites with salt and pepper.
- Heat a nonstick skillet or omelet pan over medium heat and add the olive oil. Add the diced onion, and sauté until tender.
- Add the chopped peppers and cook until the bell peppers are tender. Turn off the heat.
- Let the vegetables cool and add them to the reserved beaten eggs.
- Heat the same nonstick pan and pour the egg mixture into the pan.
- Move around so the eggs come to the edges of the omelet to allow the uncooked parts in the middle to flow out to the edges.
- Cook your omelet until the bottom of the egg is golden brown.
- Add your sundried tomatoes and feta cheese.
- Fold the omelet in half and slide it off the pan onto a plate.
- Enjoy!
