Cauliflower Rice Poke Bowl

Ingredients

  • 1 bag of cauliflower rice
  • 1 tablespoon sesame seed oil
  • 1/4 chopped onion
  • 1 teaspoon of minced garlic
  • 1/4 chopped Red pepper
  • 1/4 chopped orange pepper
  • Salt and Pepper
  • Coconut Aminos

Poke Bowl

  • Fried Cauliflower Rice
  • Reduced Sugar dried cranberries
  • Chopped Cucumber (no seeds)
  • Chopped carrots
  • A protein of choice (fresh tuna, salmon, crab meat, cooked shrimp, etc)
  • Black Sesame Seeds
  • Seaweed
  • Avocado
  • Coconut Aminos

Instructions

Cauliflower Rice

  1. Cook cauliflower rice bag according to instructions.
  2. Heat sesame oil in a large nonstick skillet over medium heat, add the onion and garlic stirring occasionally, until softened but not browned.
  3. Add the peppers until fully cooked.
  4. Add the cooked cauliflower rice and stir until golden brown.
  5. Taste and adjust seasoning with salt, pepper, and coconut aminos.

Assemble Poke Bowl

  1. Place Fried cauliflower rice in a bowl.
  2. Top with chopped cucumbers, carrots, and protein of choice.
  3. Add the dried cranberries, seaweed, sesame seeds and avocado.
  4. Add coconut aminos if necessary.
  5. Enjoy!
